with over 30 years of experience, chef anunte sae-ung is passionate about thai cuisine and insists to use high quality ingredients to make the most authentic thai dishes. anunte has worked in a number of thai restaurants and hotels in thailand for over a decade including shangri-la hotel bangkok. he came to hong kong in 1993 and worked at many five star hotels, clubs and famous thai restaurants, including sheraton hong kong hotel and towers, furama hotel, macau jockey club and café siam.

dereck hon - head chef

beginning his culinary journey in australia, chef dereck hon has over 10 years of experience as a chef despite his young age. having worked in multiple restaurants of different cuisines including thai, italian and french in australia, france and hong kong, chef hon established a strong knowledge in gastronomy and the art of cooking, allowing him to insert creative elements when designing the whimsical menus at mango tree café.
